Fox and Pearl’s new 3,000-square-foot Caramelo warehouse employees start their day early at 7 a.m. by manually feeding the dough into a semi-automatic tortilla machine, hand feeding dough directly into it for their morning shift.

Carne Asada with Mozzarella Cheese

Carne asada is a Latin American term referring to grilled and sliced beef seared over an open flame, typically skirt or flank steak, for an irresistibly seared flavor. It can be enjoyed as part of tacos, burritos, quesadillas, or salads; alternatively, it makes an impressive appetizer or snack when added to fries covered in cheese, carne asada, and guacamole for an irresistibly satisfying treat!

The beauty of this recipe is that it allows you to prepare the fries, pico de Gallo, and guacamole ahead of time; when the snacking time arrives, you can layer all these delicious ingredients within 10 minutes! Carne asada should also be cooked and sliced before snack time, but this can be done the day before and then reheated on the grill, oven, or in a skillet as soon as snack time hits!

Ruben uses only four simple, non-GMO ingredients without preservatives and pork fat from humanely raised pigs for its tortilla production process.

Ruben Leal founded Caramelo Mexican Food after becoming dissatisfied that restaurants in Kansas City did not serve chewy, stretchy Sonora-style flour tortillas like those he remembered from childhood. Now, his company ships these thin tortillas made with pork fat, duck fat, or avocado oil across the nation – like stained glass panels; they allow light to pass through like stained glass!

Mix sugar and water in a heavy saucepan to make caramel until they turn a medium amber color, approximately 10 minutes. It would be best to continue stirring the mixture occasionally until this step has been reached. If any signs of burning appear, immediately take steps to turn down the heat or remove it to protect the flan from becoming bitter. Pour the caramel into ramekins or molds for cooling before pouring.

Caramelo Enchiladas
